Gumbo

Gumbo is a seafood stew that combines ingredients from many traditions that have contributed to Alabama's food culture, including okra from Africa; hot peppers from the Caribbean; black pepper from Madagascar; salt from the French and Native Americans; tomatoes and red pepper from the Spanish via the Canary Islands; shrimp, crab, and oysters came from coastal waters; and ground filé from the Choctaws.
